Today’s I am going to share a simple cookie recipe from China, to be exact it is the Chinese Butter Cookies – Xiaodianxin. These Chinese Butter Cookies are simple melt-in-your-mouth cookies prepared with just five ingredients — flour, butter, sugar, milk, and corn starch.
Xiaodianxin:
X is always a tricky alphabet in these A-Z blogging marathons. Last year I named my post with an ingredient starting with X which I used in my recipe. It was the vegan mango ice-cream. This year I am not going with the component name but the generic recipe name – Xiaodianxin. Xiaodianxin means cookies in Chinese.
The first recipe that crossed my mind for X is Xmas Plum Cake but it’s from the UK and as I had already picked two recipes from the UK I had to skip that option. So I started to look for recipes for X, and that’s when I came across Chinese fortune cookies and when I read more, I learn that Xiaodianxin is a generic name for a cookie. So voila, I found a recipe for X and also from a country from where I haven’t posted any recipes.
But how fortune cookies became butter cookies? I did not prepare my X and Y recipes until last week. So with limited time, I did not want to take any further risks so went with these easy peasy butter cookies. But there was a little bit drama with these cookies too.
How to Press Flower-Shaped Cookies?
I liked the recipe, and I wanted to try the flower shaped cookies, so I ordered a cookie press. I always wanted a cookie press, and as it was an add-on item on Amazon, I bought it along with my usual monthly subscriptions. After receiving, I did not open the package, and when I opened it just before preparing the cookies, I realized that the press was missing the molds. I had to call Amazon customer service, and they immediately placed a replacement order with one-day shipping. (This is one among the zillion reasons I love being a Prime Amazon member). I had to postpone preparing this recipe and the very next day I made it, and here it is.
But you can make simple round cookies, or with piping bags, you can try your favorite shapes. But as I had made my mind to use the cookie press(The cookies press reminds me of our murukku naazhi/chakli press), I went with this option.
This is one melt-in-your-mouth cookie. It’s totally my kind of cookie with subtle sweetness and crunchiness. It perfectly pairs with tea and coffee. All you need is five ingredients. The original recipe calls for only four ingredients, but reduced the butter amount and added milk, the 5th ingredient to get moist cookies. Of course, this is also an eggless cookie and without any further ado, here is the recipe.
Please find my recipes from the past two marathons.
