Ingredients
Measurement Details: 1 cup = 240ml; 1 tbsp=15ml; 1 tsp=5ml;
6ozraspberries
4tspgreen tea leaves
4cupswater
4tbspmaple syrup
2lemon slices
2cupssoda water
few mint leaves to garnish
Instructions
Add 4 cups of water, 4 tsp of green tea leaves, and the entire raspberries to the inner pot of the Instant Pot.
Close the Instant Pot. Make sure the sealing ring is in place and set the vent to the sealing position. Press the pressure cook / manual button and set the cooking time as 2 minutes at high pressure.
When the cooking is complete, let the pressure release naturally. Carefully open the Instant Pot.
Using a potato masher, mash the raspberries roughly.
Strain the tea and discard the tea and the raspberries. Add the maple syrup and mix well. Add the lemon slices if using and refrigerate.
When ready to serve, add the club soda and mix. Serve chilled.
Notes
Adjust the maple syrup measure as per your preference.
You can reserve few raspberries for garnishing, but I added them all along with the tea.
Make sure your sealing ring is well-cleaned. If you have a separate sealing ring that you use for sweets, make sure to use that.
Scaling the recipe: You can double the measure if using a 6-quart or 8-quart Instant Pot.
Variations: You can use flavored tea bags or use mixed berries or berries of your choice. Instead of club soda, use sparkling water (flavored or plain) or coconut water too.
The ratio I followed: For 1 cup of water, I used 1 tbsp of maple syrup, 1 tsp green tea leaves, and ½ cup of soda. There is no set measure. Adjust as per your liking.
Add a pinch of baking soda to reduce the bitterness of the green tea.
