Preheat the air fryer as per the manufacturer's instructions. I preheated mine at 370 deg F for 5 minutes. Meanwhile, in a bowl, add the chopped potatoes and the cauliflower florets.
Add the oil, salt, red chili powder, turmeric powder, tandoori masala, and garam masala.
Mix well and ensure you have coated the spices evenly.
Line the air fryer basket with aluminum foil and place the potatoes and cauliflower. Spread them evenly. Air fry at 370 deg F for 14 minutes, shaking once halfway through around 7 minutes.
After 14 minutes of cooking, transfer the potatoes and cauliflower into the mixing bowl and add the crushed kasoori methi.
Mix well and add it back into the air fryer basket. Now increase the temperature to 400 deg F and air fry for 2 minutes. That's it, the aloo gobi masala is ready. Serve it hot with rice or roti.
Notes
Lining the air fryer basket with aluminum foil helps in easy cleaning. It's not mandatory to do that.
Adjust the spices and salt to taste.
Make sure you coat the spices evenly also and spread them evenly in the air fryer. Do not layer them up, and if the quantity is more, try in the oven or make them in batches in the air fryer.
Conventional oven timings
Line a baking tray with aluminum foil and add the potatoes and cauliflower coated with spices. Bake it in a preheated oven at 400 deg F for 20 minutes, tossing them once in between.
Then add the kasoori methi and bake again for 5 minutes at high broil mode.
