– 5 tbsp oil divided (2 tbsp + ½ tbsp + 2.5 tbsp) – 10 brinjals approx 320 grams. tender ones preferably For the wet paste – 1 red onion chopped. Approx 210 grams – 5 cloves – 3 green cardamoms – 2- inch cinnamon bark – 1.5 tsp ginger garlic paste For the dry paste – 4 tbsp peanuts – 1 tbsp white sesame seeds – 1 tbsp poppy seeds – 2 tbsp dry coconut unsweetened one Other ingredients – 1 tbsp coriander powder – 2 tsp red chili powder or to taste – 1 tsp garam masala you can add up to 2 tsp – ½ tsp turmeric powder – 1 tsp tamarind paste – 2.5 tsp salt or to taste – 2 cups water – ½ tbsp jaggery optional – 2 tbsp cilantro chopped Measurement details: 1 cup = 240ml; 1 tbsp = 15ml; 1 tsp = 5ml.
