    Effortless and delicious cauliflower roast recipe with sumac. Here is my oven-roasted cauliflower with sumac, a versatile recipe that you can customize and serve in different ways.

    My love for roasted veggies is growing day by day.  With oven, you can easily cook any vegetables with minimal oil and supervision. It’s effortless, and that’s the part that I love the most. The Internet is flooded with the benefits of roasting veggies, so I don’t want to repeat them again. 

    I recently posted stuffed okra baked in the oven, and also I have shared oven-roasted potatoes with rosemary and Indian-style baked potatoes, Brussels sprouts, and more. I am now adding this roasted cauliflower to my recipe repertoire. 

    Sumac Spice-

    It’s the lemony-flavored spice that is part of the Za’atar blend. Sumac powder comes from purple sun-dried berries, and it’s quite popular in the Middle-Eastern food. It’s a fantastic flavor enhancer, and you can use it for different dishes. 

    I paired this cauliflower with my falafel bowl, so I used the sumac spice. But you can use spices of your choice like garam masala, cajun spice mix, peri-peri or Italian seasonings or tandoori masala and what not. The sky is the limit when it comes to the spice blends. You can even use red chili powder and make a simple spiced cauliflower roast.

    How to serve this cauliflower roast-

    Irrespective of the diet we are following, it is always better to load our plate with vegetables, and this roasted cauliflower is one such vegetable. You can serve it as a side for your rice or roti, or even pasta. Add it to your rice bowls or even into your salads. Guess what, you can also add it to your tacos and quesadillas. The list goes on.

    I served it along with my falafel rice bowl. I tried recreating the Sajj (A Mediterranean food chain) falafel bowl last month, and I love the sumac cauliflower that comes as a side in the rice bowl.

    So I wanted to make something similar, and that’s when I came across this roasted cauliflower recipe at “give recipe“. While I followed the same spice measure, I reduced the oil significantly and went with similar timing like my roasted cauliflower steaks. 

    It was simply amazing and loved how it paired well with the rice bowl.

    Sumac Cauliflower Recipe-

    • Preheat the oven at 400 deg F. 
    • Line a cooking sheet or baking tray with aluminum foil and grease it with oil. Now add the cauliflower florets to the lined baking tray.

    • Add the olive oil, salt, and sumac. Mix it thoroughly with hands. Make sure you rub and evenly coat the florets with oil, salt, and sumac.

    • Bake it at 400 deg F for 15 minutes and remove it from the oven. Gently toss/flip the cauliflower florets.

    • Bake it again at 400 deg F for 15 minutes. We are baking for 30 minutes at 400 deg F flipping them once half-way through.

    • Garnish it with chopped parsley leaves and serve it as a side or let it cool a bit and add it to your salads.

    Recipe Notes-

    • As I mentioned before, you can add spices of your choice instead of sumac. Adjust the amount according to your preference, and the same goes for the salt as well. 
    • If you prefer a crisp cauliflower, bake for an extra 5 to 7 minutes. 
    • You can add ⅛ tsp of turmeric powder for that beautiful yellow hue.

    • 300 grams cauliflower florets
    • 2 tbsp olive oil plus ⅛tsp to grease
    • ½ tsp sumac heaped
    • ½ tsp salt or to taste
    • 2 tsp parsley chopped to garnish
