This recipe got published in Salis Online magazine. I am reposting it here in my blog again. I love these fusion recipes. Recently started to venture out more of these kind. Starting off with kids special. Kids all love Spaghetti and Pasta. Instead of regular white sauce pasta or tomato sauce pasta, I thought of including Indian flavor to it and here is the fusion Spaghetti Pulav. You can veggies of your choice and its perfect for lunch box or even for dinner.
Here is the recipe:
Ingredients
- Angel hair pasta – 100gms
- Elaichi /Cardamom – 2
- Cloves – 3
- Cinnamon stick – 1 inch
- Half of medium sized onion finely chopped
- Tomato – 1 (Finely chopped)
- Finely chopped cilantro – 3 tbsps
- Finely chopped mint – 3 tbsps
- Green chilly – 1
- Coriander powder – ¼ tsp
- Mixed vegetables chopped – ½ cup
- Salt – 1 tsp + ½ tsp
- Oil – 1 tbsp + 1 tsp
- Water – for cooking pasta (unto 4 cups)
Method:
- Boil 4 cups of water by adding 1 tsp of oil and ½ tsp of salt.
- Add the pasta and let it cook for 7-8 mts. Pasta needs to al-dente.
- Drain the water and set it aside.
- Heat the kadai and add oil and once the oil is hot add the onion.
- Cook till the onion turns translucent.
- Now add the cilantro and mint leaves. Let it cook for couple of minutes.
- Now add the veggies, tomato, salt and coriander powder.
- Cover and cook for 3 minutes.
- Meanwhile dry grind cardamom, cloves and cinnamon.
- Add this grinded powder to the veggie and mix well.
- Reduce the heat and add the cooked spaghetti.
- Mix well and thats it spaghetti pulav is ready.
