Sattu Porridge – A healthy and protein-rich breakfast porridge made with sattu flour or the roasted chickpeas flour mix and milk. An easy grab and go breakfast beverage!
I love smoothies and porridges for my breakfast, and my recent favorite is this sattu porridge. When I shared it on my Instagram, many had asked for the recipe. So I thought of creating a video and sharing it here on my blog as well. It’s a straightforward recipe, but before looking into the recipe, let’s see what sattu means.
Sattu Drink Mix:
As Wikipedia puts it – Sattu is a flour-mix from the Indian subcontinent consisting of a mixture of ground pulses and cereals. It is quite popular in Bihar, Uttar Pradesh, Uttarkhand, Punjab, Odisha, and in many other states as well.
Every state has it’s own proportion of ingredients. Some are made with roasted split chickpeas and barley while some with roasted black chickpeas, millets, and nuts. In most of the sattu flour mixes that I have seen, roasted chickpeas are the main ingredients.
You can also make energy balls and parathas (flat-breads) with the sattu flour.
Now, don’t worry, I am not going to ask you to make the sattu mix from scratch. (You can easily make it, but I will share that on some other day. I have a porridge powder recipe with barley and green gram. You can check that out as well) The sattu drink mix is readily available online and in Indian grocery stores.
Why Porridge? Why do I need to Cook Sattu Mix?
You may all ask, why can’t I directly add sattu to milk and relish with some added sugar or sweetener or to butter and add spices? You can do it and, that’s what the package says too. But why am I cooking it again to make the porridge? It’s a personal preference, and cooking the porridge powder / sattu mix furthermore enhances the flavor and provides a good consistency.
Kanji | Congee
Do you know, the word congee, comes from the Tamil word Kanji? Not only this word, but there are few other words derived from the Tamil language. Kanji is not only popular in Tamil Nadu but also in other states. Most of the houses will make their kanji mix by roasting the ingredients and grinding into a fine powder.
These porridges are great for kids too. I grew up eating ragi porridge and the same with Raghav. I started to feed him thick ragi porridge more like gruel from 8 months of age. Kanji is an integral part of Tamil cuisine.
As I mentioned above, we roast all the ingredients for the kanji mix. If you notice in my green gram and barley porridge powder, I would have roasted all the ingredients and the same with pearl millet gruel. Even after roasting and grinding, we still cook the flour mixed with water. Then add buttermilk or milk according to our preference. Cooking again enhances the flavor and also helps the porridge powder to blend well with the milk or buttermilk.
I got so used to this method that when I bought the sattu flour mix, even when the package said directly add to milk/water, I started to cook it with water and then add the milk.
Cooking Time:
You need just 10 minutes to make this porridge. We need to mix the sattu flour with water. You can add the sugar as well and simmer it till it thickens. It doesn’t take more than 4 minutes for the porridge to thicken over medium heat. Then add the milk and cook for one or two minutes, and that’s it. The porridge is ready.

How to Make Sattu Porridge?
- In a saucepan, add the sattu mix, coconut sugar(any other sweeteners to your choice), and water.
- Mix it without any lumps.
- Now simmer this over medium until it thickens. It usually takes about 3 to 4 minutes. While it is simmering, don’t forget to stir in between to avoid the lumps.
- When you see bubbles on top as shown in the picture, add the milk and mix.
- Simmer it for a minute or two. I usually simmer it for one minute.
- That’s it. The porridge is ready.
Recipe Notes-
- I used a store-bought sattu flour mix. You can use homemade ones or any other porridge powder. The time it takes to thicken might vary accordingly.
- Instead of regular milk, you can add nut-based milk and make this a vegan beverage, as well.
- I went with unrefined coconut sugar for this recipe. But you can use any sweeteners of your choice.
- I did not boil the milk as it was pasteurized. But if you boil milk regularly, then add the boiled milk.

- 4 tsp coconut sugar
- 1 cup water 240 ml
- 1.25 cup milk 300ml
Instructions
- In a saucepan, add the sattu mix, coconut sugar(any other sweeteners to your choice), and water. Mix it without any lumps.
