    This super simple Sathu Maavu Urundai or Health Mix Laddus with Ghee Residue is one of our traditional family recipes but with a twist. The multigrain laddus is prepared with ghee residue, sugar and with a health mix such as the sathu maavu.

    Health Mix Laddus with Ghee Residue

    This is a semi-homemade recipe as I went with store-bought sathu maavu. But you can use homemade ones very. In fact I have two homemade sathu maavu recipes one on my blog and other on my youtube channel. 

    Now coming back to today’s recipe, back in Periyakulam, Amma used to prepare ghee from scratch if not she will buy butter and prepare the ghee. We never bought ghee from store till date. Yes, you read it right, till date. I don’t buy it either. I don’t prepare it from scratch but get the organic butter and prepare ghee at home.

    Preparing Ghee Residue

    I do add curry leaves and drumstick leaves (if I have) while preparing the ghee. I love the flavor of those leaves in ghee.  Usually we prepare pongal or rasam in the vessel in which we melted the butter. But sometimes amma used to roast wheat flour in it and adds some sugar and serve me without shaping into laddus. I love that mix and it has the burnt flavor of ghee. It is a very unique taste.

    Ghee residue in Tamil is called as Nei Kasadu. (நெய் கசடு)

    I always have sathu maavu in my pantry. As my home made one got over, I bought the store bought mix. It comes in handy for preparing porridge and gruel. Last week when I prepared ghee, I thought why not roast the sathu maavu instead of wheat flour. Then went one step further and shaped into balls with more ghee. Viola – health mix laddus were ready in no time.

    Sathu Maavu Urundai with Three Ingredients

    All you need is three ingredients – the health mix, ghee and powdered sugar. You can prepare the same without the ghee residue too. (You will miss the burnt ghee taste but ghee is ghee always. No matter what it tastes good) now sky is the limit. You can add cardamom powder and your favorite nuts or prepare this with wheat flour or ragi flour or millet flour.  

    So without any delay here is a super simple recipe.

    Sathu Maavu Urundai or Health Mix Laddus with Ghee Residue Recipe

    Ingredients:

    • Sathumaavu/Health Mix – 1 cup
    • Ghee – 1 tbsp + 2 tbsps (If you are not using ghee vessel, add 2 more tbsps)
    • Powdered Sugar – ¾ cup

    Steps:

    • Here is my vessel in which I prepared the ghee.

    Heating vessel and adding 1 cup of sathumaavu or health mix

    • Heat this vessel and add 1 cup of sathumaavu or health mix.
    • In medium heat, slowly roast it for 3 to 4 minutes.
    • Then add the powdered sugar and 1 tbsp of ghee and mix them well.
    • Turn the heat off and let it cool for about 5 to 7 minutes.

    Adding little bit of ghee

    • Once you can handle the heat, slow add little bit of ghee (don’t add the entire 2 tbsps of ghee) and shape it into balls as shown in the video.

    That’s it, yummy laddus are ready. Store them in airtight container.

    Notes:

    • Instead of a health mix, you can prepare this with wheat flour or ragi flour or any millet flour.
    • Adjust the sugar according to your preference.
    • If you are not using ghee vessel, heat the kadai or heavy bottomed vessel with 2 tbsps of ghee and dry roast the flour.
    • Cardamom powder and dry fruits can be added for additional taste.

      Same pinch.We too add curry leaves / drumstick leaves and along with that a few fenugreek seeds too while making ghee. This is one healthy ladoo and I have sathumaavu . Will make this for the kids.
