Rotimatic Flour Tortillas Veggie Tacos
Taco is a favorite Mexican dish prepared with flour or corn tortillas which are then filled with delicious meat or veggie based fillings. Taco trucks are quite popular here in the US. We all love tacos especially the kiddo. He likes to carry tacos for lunch also. Yes, tacos are very filling and are perfect for the lunch box.
Taco is a versatile dish, and you make it with a variety of fillings. You can even fill it with Paneer Masala and rice. Once you have the flour or corn tortillas, it is easy to prepare a Taco. And here comes the big task – the preparation of tortillas.
Tortillas with Rotimatic
So what is tortilla? It’s flatbread Mexican bread. The one made with wheat flour or APF is known as a flour tortilla, and the one prepared with corn flour / Masa Harina is the corn tortilla. (Corn tortilla recipe coming soon) Our Indian bread Roti falls under the tortilla category too. And yes, you can make tacos with roti also.
But I want to try making flour tortillas only with APF in Rotimatic. Flour tortillas have only fewer calories more than corn tortillas. But I can assure you that the Rotimatic APF tortillas are much healthier than the store-bought ones. You don’t need to worry about hidden ingredients nor the preservatives.
Now you can throw a fajita party or taco party at home without any worries.

Rotimatic Flour Tortillas Veggie Tacos Recipe
Ingredients:
For the Tortillas:
- All-Purpose Flour – 2 cups
- Baking Powder – 1 tsp
- Salt – ½ tsp
- Olive Oil – as required
- Water – required
For the Tacos:
- Homemade Refried Beans – 1 tbsp for each taco or as needed
- Cooked Pinto Beans – 1 tbsp for each taco or as required (See notes for options)
- Guacamole – 1 tbsp for each taco or as required
- Roasted Veggies – 2 tbsps for each taco or as necessary for each taco
- Sour Cream – 1 tbsp for each taco or as needed
- Cheese – 1 tbsp for each or as required
For the Roasted Veggies:
- Olive Oil – 2 tsps
- Zucchini – 1
- Colored Mini Bell Peppers – 6
- Onion – ½
- Mushrooms – 5
- Dried Oregano – 1 tsp
- Salt – ½ tsp
- Ground Pepper – ½ tsp
Rotimatic Setting:
- Recipe: Roti
- Flour: Sujata Gold
- Thickness: 1
- Roast: 1
- Oil: 1
Preparing the Tortillas:
- Mix the salt, APF and the baking powder in a big bowl.
- Transfer it to the flour container of rotimatic.
- Fill in the water container and oil container. I would recommend Olive oil, but you can use other oil as well.
- Now start the rotimatic and select the roti option and the flour. I used Sujata Gold.
- Select your thickness, roast level, and oil. I kept everything to the minimum. You can see the setting level above.
- Select the count and let the rotimatic do its magic.
Making Roasted Veggies:
- In a pan add the oil.
- When the oil is hot, add the all the veggies, salt, pepper, and oregano.
- Saute the veggies over high heat for 4 to 5 minutes or until the vegetables are soft and tender. Do not add any water. Salt will help the veggies to ooze out and cook until it evaporates.
- Assembling the Taco:
- Take the flour tortilla and spread the refried beans, followed by guacamole and sour cream.
- Then add the cooked pinto beans, roasted veggies, and cheese. Fold and serve warm.
Notes:

- While making the refried beans at home, I set aside the cooked beans before mashing. I used it for the taco. You can use any cooked beans of your choice either seasoned with cumin and chili powder or unseasoned as well.
- Adjust the salt and spices according to your preference. As my cooked beans had spice, I did not add any additional seasonings.
- You can prepare the filling of your choice with your favorite protein.
- There is no set order for the filling, you can add according to your preference.
- Also, I did not cook the tacos after adding the filling.
