This No Bake Cranberry Sauce Cheese Cake with Agar Agar is a super simple, no bake cheese cake recipe that can be whipped up in no time!

This time I wanted to try a simple semi-homemade dessert recipe (along with some savory ones too) with the yummy cranberry sauce that I prepared in my slow cooker.
When I was browsing through the November issue of Good House Keeping magazine, I came across this cheesecake recipe and voila, I knew what dessert I was going to prepare. As I have already posted the single serving mango cheese cake recipe, I thought of trying the regular cheesecake with pie crust.
Cranberry Sauce Cheese Cake
For this recipe, I went with store-bought graham cracker crust. But you can always prepare the same, at home too. You can find the recipe for the homemade crust in my pumpkin pie post and in the mango cheesecake post. I have provided the recipe links below. The biggest advantage of store-bought pie is that they are very handy and easy to carry especially for parties and potlucks.

And here comes the no bake cranberry sauce cheesecake.
No Bake Cranberry Sauce Cheese Cake with Agar Agar Recipe
Ingredients:
- Cream Cheese – one 8 oz pack
- Cranberry sauce – ⅔ cups + 3 tbsps
- Milk – ¾ cup
- Sugar – ½ cup
- Vanilla essence – 1 tsp
- Condensed milk – 1 tbsp
- Agar – Agar – 1.5 tsps
- Chopped Almonds – 1 tbsp for garnish
- 9 inch Graham Cracker Crust – 1
Steps:
(I didn’t remove my crust from the aluminium tray. If required, you can remove the crust from the tray first)
- Add ⅔ cup of the cranberry sauce to the bottom of pie crust and spread it out evenly and set aside.
- Take the milk in a heavy bottom pan and add the agar agar powder to the milk and mix well.
- Now heat the milk slowly and keep stirring it so that the agar agar mixes well and it doesn’t get deposited in the bottom.
- As small bubbles starts to form, turn the heat off and let it cool down to room temperature.
- While the milk is cooling down, add the cream cheese, sugar, vanilla essence, condensed milk to a mixing bowl.
- Using a hand mixer, mix them for about 5 minutes until all the ingredients are well incorporated.
- Now slowly add the agar agar milk mix to the cheese mix. I added half of the mix first and using the hand mixer blended it for about 3 minutes and then added the remaining milk mix and blended again for 3 more minutes.
- Now pour this cheese mix on top of the cranberry sauce in the pie crust and spread it out evenly.
- Finally add the 3 tbsps of cranberry sauce on the top in your favorite design. Either you can drizzle on top or as like just spread it out again. ;-)
- Let it set for at least 6 hours or leave it overnight and that’s it. Before serving sprinkle some crushed almonds.
- Yummy no bake cranberry cheese cake is ready.
Notes:
- As we are adding the cranberry sauce in the bottom, the crust becomes soft. So if you want to remove the crust from the tray, do it before assembling the cake.
- Adjust the sugar and condensed milk as per your preference. If you are using condensed milk more than 3 tbsps, reduce the milk quantity to ½ cup.
- Instead of regular milk, you can use heavy cream to make it more rich and creamy.
- If you are using gelatin, follow the instructions as mentioned in the gelatin pack.
