Here is my simple recipe for eggless brownies sprinkled with sea salt! These cakey brownies are perfect with ice cream, and I can assure you that you can’t stop with just one. :-)

You all know how much I love eggless bakes. All the cakes and cookies in my blog are egg free. And I made these brownies without eggs as well.
I adapted this recipe from Gayathri’s “Delicious Egg Free Cakes” mini book. I received this book for review, and it’s a great book for eggless bakes.

I have been following Gayathri for a while, and I love all her recipes, and her measurements are so perfect that you can follow them blindly.
Returning to the brownie recipe, I halved the measurements and made a small batch. The original recipe calls for chocolate chips, but I skipped the chocolate chips and sprinkled some sea salt. I love salted brownies, period. :-) Also, I used a mix of brown and white sugar.
You don’t need any special equipment to make these brownies. You need a hand whisk. We mix the wet and dry ingredients separately and combine them and then bake. It’s as simple as that. Let’s get straight into the ingredients and the details.
Ingredients required
Dry ingredients: We need all-purpose flour, baking powder, baking soda, instant coffee granules(it brings out the chocolate flavor, so don’t skip it), sugar, and unsweetened cocoa.
Wet ingredients: We need milk, yogurt, vegetable, or corn oil.
Also, sea salt flakes or crystals drizzle on top of the brownies.

Baking brownies in a round pan
Yes, as you can see from the picture, I baked these brownies in my round pan. Even though I have a square pan and usually bake these brownies in the square pan, I have always wanted to try baking them in a round pan. I know not everyone will have different baking pans and trays, so I wanted to try this way. Guess what? The brownies came perfectly, and you can slice them into squares easily. The edges might be a different shape, but hey, it’s still a brownie. :-)
Dietary specifications and storage suggestions
These brownies are nut-free and egg-free. You can enjoy it warm or cold. As it’s an oil-based and cakey brownie, it stays soft and moist in the refrigerator for up to a week. I usually warm them in the microwave for 30 seconds and enjoy them with ice cream.
How to make eggless brownies
- Preheat the oven to 350 degrees F. Grease the pan with oil, and you can also line the bottom of the pan with parchment paper.
- Sieve the all-purpose flour, baking powder, baking soda, and unsweetened cocoa powder in a bowl. Add the coffee powder, brown and white sugar. Mix well without any lumps.
- In another bowl, add the wet ingredients – milk, yogurt, and oil. Mix them well.
- Now slowly pour this into the dry ingredients and mix well until combined.
- Now pour this into the greased baking pan. Drizzle ½ sea salt on top and swirl it once with a fork or toothpick. Drizzle ½ tsp more on top and let it stay.
- Bake it for 25 minutes or until a toothpick inserted comes out clean.
- Add the remaining sea salt and let it sit. Let it cool, and slice it into desired shapes. Serve it with ice cream or the way you like.

- You can add vanilla essence if you like to these brownies.
- Sea salt is optional; you can add dry fruits, nuts, or chocolate chips.
- You can reduce the sea salt to 1 tsp or use sea salt flakes.
- VVK Tips:

- Sift the ingredients for a smooth and lump-free batter.
- Do not overmix the batter.

Eggless Brownies | Eggless Cakey Brownies with Sea Salt
Ingredients
Measurement Details: 1 cup=240ml; 1 tbsp = 15ml; 1 tsp = 5ml;
- 1 cup all-purpose flour
- ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp instant coffee powder
- ¼ cup brown sugar
