I love simple and low-carb veggie sides with minimal ingredients. These blistered shishito peppers tick all the requirements, and it’s a perfect side dish for any meal. I first tried these shishito peppers at my colleague’s place, and he roasted them on the stove-top. He made it with three ingredients – shishito peppers, olive oil, and salt and it was simply amazing. I was gobbling it up one after another. (no, I am not exaggerating)

Shishito Peppers
Ok, if you wonder what shishito peppers are – they are mild (some are sweet too) Japanese green peppers, and you can find them readily in summer through early fall. I usually get them from Safeway or Whole Foods, but you can find them in Traders Joe’s and other grocery stores.
These peppers are not hot, and on a scale of one to ten, I would rank them at two. I could say one too, but sometimes, one or two pepper from the lot will have the kick. That’s about it.

While you can roast these peppers on the stove-top, it’s pretty easy, effortless, and hands-free with the air fryer. But please check the oven and stove-top options too. (Provided below)
Ingredients
We only need four main ingredients, and here they are. There are no set measurements for this recipe. Adjust them as per your liking.
Shishito peppers: I used the entire 8 oz pack that I got from the store. If required, wash the peppers and pat them dry before air frying. Instead of shishito peppers, I read that you can also use Padron peppers, but I have never tested this recipe with any other peppers.
Garlic cloves: I used three garlic cloves, approx 15 grams. I grated them finely so that I can coat the garlic evenly on the peppers.
Olive oil: You can use 2 to 3 tsps of extra virgin olive oil or any other oil of your choice.
Salt: I went with fine sea salt, and also I added it along with garlic. But you can use sea salt crystals too.
Serving suggestions
These air fryer shishito peppers are amazing without any dipping sauces, and they are great party appetizers/snacks. You can serve it simple with some lemon or lime zest and lemon juice or lime juice. But there is no harm in jazzing it up with some sauces.
I drizzled some dark soy sauce before serving. Teriyaki sauce is also an excellent dipping sauce for these shishito peppers. Or you can serve it up with sriracha mayo, plain mayo, or yogurt as well.
Guess what? I relished it along with my dal rice, and the combination was terrific!
Dietary specification
The air fryer shishito peppers without the side sauce are vegan, nut-free, and gluten-free. But depending on the side sauce, the dietary specification might vary. If serving along with any sauce, make sure to check the allergen details.
Now without any further ado, let’s see how to make these garlicky shishito peppers.
Step by step instructions
- Add the shishito peppers, grated garlic cloves, salt, and olive oil in a mixing bowl.
- Mix well with hand and ensure all the ingredients are well combined and evenly coated.
- If needed, preheat the air fryer according to the manufacturer’s instructions. I preheated the air fryer for 5 minutes at 370 deg F. Add the shishito peppers to the preheated air fryer basket. I did not use any oil spray.
- Air fry for 4 minutes at 400 deg F. Here is how it looks after 4 minutes.
- Now gently toss them and air fry again for 3 to 4 minutes at 400 deg F. Depending upon how you like your peppers, adjust this timing.
- Remove from the air fryer, drizzle some soy sauce (and some salt, if needed), and serve warm.
Stove-top instructions
- In a large skillet (preferably cast iron), add the oil and heat over high heat.
- Parallelly, mix the grated garlic, salt, and shishito peppers. Add these peppers to the skillet and cook until the peppers are charred and blistered. Toss them as required and make sure you are not overcrowding the skillet.
Oven instructions
- Preheat the oven at 425 deg F. Line a baking tray with aluminum foil or parchment paper.
- Add the shishito peppers, grated garlic cloves, salt, and olive oil in a mixing bowl. Mix well and add the peppers to the baking tray.
- Bake for 8 to 10 minutes, shaking them halfway through.

- There is no set measure for the garlic. Adjust the garlic amount as well as the salt to your liking.
- You can add up to 3 tsps of olive oil for this measure, and you can use the oil of your choice.

Will try out the air fry method which seems very easy to make. I love shishito pepper (usually have them in yakitori places). When I make at home I was doing the laborious method of grilling them over the gas flame couple of them at a time. Later adding the sauce mixture of mirin, sugar and low-sodium soy-sauce in equal quantity.
