This Mango Shrikhand with Greek Yogurt or aam shrikhand is popularly known as amrakhand. All you need is yogurt, mango puree, and sugar to prepare this yummylicious dessert.
The mango season has begun and if I can find fresh ones here in the US, needless to say about in India. :-) So let’s kick start this mango season with this simple single serving shrikhand recipe. While the main ingredients are necessary, all other ones are entirely optional, so you can adjust them as per your preference. Today I am going to share how to make this amrakhand with Greek yogurt.
I was contemplating on what to prepare for the dessert in my Gujarati Thali spread. Finally decided to prepare simple shrikhand, but when I saw fresh mangoes in the local grocery store, I immediately decided to make this amrakhand. You can whip this recipe in less than 15 minutes and with 5 minutes of freezing the dessert is done. As I had time, instead of freezing I just refrigerated for a couple of hours.
What I Love
I love yogurt based fruit dessert. Our favorite dessert joint is Pink Berry, and we love all their flavors (it keeps changing) and the best part is the toppings. We can add what we like from their collection. During my last visit to Chennai, saw Pink Berry in Phoenix mall but didn’t get a chance to visit. I got to visit this time to see the flavors they have.
I love Greek yogurt. And I can’t get enough of the thick creamy texture of the Greek yogurt. Even though I prepare yogurt at home, now and then I buy this Greek yogurt. I just drizzle some honey on top and gobble it up. :-) And for this amrakhand, instead of honey it’s the mango puree.
That’s it. It’s as simple as that. It’s a delicious mango yogurt relish. I did add 1 tbsp of sour cream to make it creamier, richer. But you can skip that altogether.
Mango Shrikhand with Greek Yogurt
Here is how I whipped up this recipe. And don’t forget to check out the Gujarati Thali Spread which is coming up next. :-)
Ingredients:
- Mango Puree – 1 cup
- Yogurt – ½ cup
- Sour cream – 1 tbsp
- Cardamom powder – ¼ tsp
- Saffron strands for garnishing + chopped mangoes or mango puree for garnishing
- Sugar – 3 tbsps
Prep – Work:
- Wash and peel the mango skin. Puree the pulp and set aside about 1 cup. I used the Mexican variety mango that we get here, and I chopped the flesh from one and a half mangoes and used the remaining for garnishing.
Steps:
- In a wide mixing bowl, add the Greek Yogurt, mango puree, sour cream, sugar and cardamom powder and mix well.
- Using a whisk or hand blender mix them all together.
- Add this mango mix to individual ramekins.
- Garnish with saffron strands and chopped mangoes and refried rate them.
- If you are planning to serve immediate, freeze it for 5 minutes.
That’s it. Yummy amrakhand is ready.
Notes:
- Sour Cream is entirely optional.
- I went with 1:2 ratios for yogurt to mango puree but you do equal proportion or the other way round too.
- The sky is the limit for garnishing. You can add chopped nuts or other fresh fruits that compliment mango or dried fruits or honeycomb biscuits or sugar sprinkles or candies and what not. :-)
