Fruit Custard is one of my favorite desserts. If you are regularly following my blog, you will know that I always prefer fruit-based desserts. With the goodness of milk, custard powder, and my favorite fruits like banana and apple, it is one of the yummiest desserts.
It is also one of the easiest desserts to prepare. I usually make it on Sundays for our meal as a little weekend treat.
Fruit Custard | Custard Fruit Salad
Fruit custard or custard fruit salad is a creamy fruit dessert prepared by adding mixed fruits to a custard sauce. And this sauce is not the traditional one prepared with eggs. I used store-bought custard powder to make the sauce with the milk.
It’s a semi-homemade recipe, and this custard powder comes in handy for many other recipes as well. I usually use it in my kheer as well, as I used for sago kheer.
How to make fruit custard, and what fruits to use?
✔ First, you prepare the custard sauce. I used my microwave to prepare the sauce. You can find the stove-top instructions in the recipe notes section. Along with custard powder, I added some saffron for additional flavoring. You will find different flavored custard powder these days. I like mango-flavored and vanilla-flavored custard for this dessert. For this recipe, I went with mango-flavored custard powder. You can find custard powder online and in Indian groceries.
✔ After making the custard sauce, you need to let the sauce cool. It will thicken slowly. Once it reaches room temperature, you can add fruits of your choice and chill and serve it.
Additional Flavorings: For this recipe, I used both rose syrup and saffron for additional flavoring. These both go well with mango-flavored custard. But these are entirely optional.
Fruits to add: I always add banana and apples. If grapes and pomegranate or in season, I usually add them before serving as it might thin down the fruit custard.
Measurements
There is no set measure for this recipe. You can adjust the amount of sugar, custard, and fruits as per your choice. I love the flavor of custard, and I always add a little extra. For 1 cup of milk, you can add 1 to 1.5 tbsp of custard powder but not more than that.
How to serve fruit custard
It’s a perfect dessert to serve after the meal. It’s a crowd-pleaser recipe making it perfect for parties and potlucks. If I plan for a Diwali potluck or party, along with other desserts, I will always have this fruit custard on my menu.
Typically it is served chilled. But during summer, I like to add a scoop of ice cream to the fruit custard before serving. I know it’s a sinful combo, but for once in a while, indulgence is ok.
Without any further ado, let’s see how to make this fruit custard in the microwave.
Note: I tested this recipe in my 900W microwave at the full 100% heat setting.
Fruit custard recipe with step-wise pictures:
- In a microwave-safe bowl, add the milk and microwave it for 4 to 5 minutes. Keep stirring it every 2 minutes, and this ensures it doesn’t overflow. Now add the saffron strands, sugar, and custard powder. Mix it vigorously with a hand whisk and make sure there aren’t any lumps. Alternatively, you can take out ¼ cup of milk, mix the custard, and then add it to the remaining milk.
- Now microwave this custard milk for 1.5 to 2 minutes. It will thicken slowly. As it cools down, the mixture will thicken. Let it cool for 10 minutes; if the mixture hasn’t thickened to your desired consistency, microwave for a couple of minutes. Let the custard sauce cool down to room temperature.
- Meanwhile, chop the fruits. Add to the room temperature custard sauce. Mix well and refrigerate. Just before serving, drizzle some rose syrup and top it up with pomegranate arils and grapes if using.
