    Eggless Microwave Vanilla Mug Cake

    Eggless single-serving vanilla mug cake made in the microwave! A quick dessert perfect for those sweet-tooth cravings.

    As much as I love to bake eggless cakes and cookies, I love to make quick desserts in the microwave, especially mug cakes. As these are single-serving, you can easily control the portions without worrying about overeating. If you don’t want to bake a big cake, these microwave single-serving cakes are your best bet.

    This eggless vanilla mug cake is the kiddo’s favorite, and it’s a staple in our household. Earlier I used to make it for my son, and now my soon-to-be teenager makes it independently. Yes, it’s that simple. 

    Ingredients

    It’s a basic eggless vanilla cake, and we only have a handful of ingredients. The only exotic ingredient that we have here is condensed milk. (Check recipe notes for variation)

    Dry ingredients:

    Flour – I have used unbleached all-purpose flour, and I have always used all-purpose flour and haven’t tested with wheat flour.

    Sugar: Granulated sugar works well, but you can also use brown sugar. 

    Baking powder: We need ¼ tsp of baking powder. Make sure to use good-quality baking powder. 

    Wet ingredients:

    We need an equal measure (1 tbsp) of condensed milk, regular milk, and vegetable oil. Apart from this, we also need vanilla essence. Two drops are more than sufficient. More essence makes the cake bitter. 

    Microwave cooking instructions

    Test the cake for doneness by inserting the toothpick, and it should come out clean without wet batter. It’s ok if the toothpick comes out clean or with a few crumbs clinging to it. The cooking time might vary depending upon your microwave power setting. But it shouldn’t take more than 90 seconds. 

    I have tested this recipe in 3 different microwaves with different power settings. 

    • I used my 900W microwave for this recipe, and 60 seconds worked perfectly.  
    • If you are using a 1250W microwave, 45 seconds is sufficient.
    • For a 1150W microwave, 50 to 60 seconds should work. 
    • Anything below 900W, you might need 75 seconds. 

    Reader recommendation: I usually place the mug/ramekin in the center of the microwave, and I haven’t faced any issues. One of my readers recommended placing the mug/ramekin on the side instead of the center, which helps in even cooking. You can give it a try either way and let me know.

    Dietary specifications

    This is a nut-free and eggless mug cake. I highly recommend relishing this right away. You can also use the same recipe and make cake pops. 

    How to make eggless vanilla mug cake.

    PS – I made two single-serving mug cakes. 

    • First, add the dry ingredients in a microwave-safe ramekin or coffee mug – all-purpose flour, sugar, and baking powder. Then add the wet ingredients – oil, milk, condensed milk, and vanilla essence.

    • Mix well without any lumps. There shouldn’t be any dry flour.

    • If you are using sprinkles, add them now.

    • Microwave this for 60 seconds or until the cake is done. It should not take more than 90 seconds. I microwaved one cake at a time. Let it cool for 1 to 2 minutes and enjoy it right away! Please refer to the post for microwave timings.

    Recipe notes

    • Do not microwave the cake for more than two minutes.
    • Instead of vanilla essence, you can add fruit flavors like pineapple or mango, strawberry, and some fruit purees to prepare the fruit-based cake.
    • I highly recommend ceramic mugs or ramekins for microwave cakes. Make sure there is sufficient space for the cake to rise. 
    • Microwave cakes are best when enjoyed fresh. 
    • Instead of condensed milk, I tested this recipe with 1.5 tbsp milk and 1.5 tbsp sugar. But I prefer the condensed milk version.

      The time on this recipe was very off and you could taste some of the baking powder after a while in your mouth . We followed the recipe step by step one more time and it still tasted the same and was very dry, almost very overdone cookie like :(.

        Sorry to hear that this recipe didn’t work for you. I will retest again with little less baking powder. I think an extra 1/2 tbsp of liquid cooking it for a shorter period would have prevented the dryness. What was your MW power? Anyways thanks for the feedback, will retest again and update if needed.
