Yes, Vegetarian Ceviche Salad does exist! :-) Here is my delicious and refreshing vegetarian version of the ceviche salad without seafood and oil but with beans. The perfect salad that you can relish any time with any meal.
As I was exploring the South American cuisine, I came across a lot of ceviche salad recipes. I was looking for the vegetarian option and voila the world wide web was flooded with a lot of vegetarian ceviches. I adapted my ceviche recipe from Spruce Eats version. Another simple salad that I will be making again and again. I am sure you will be too.
As I mentioned before, these days I am relying on beans based salads for my mid-morning and evening snack and this is a perfect one for me make ahead and pack as well.
The fresh onions marinated in the lime juice enhances the flavor of this salad. You can easily customize this salad and adjust the veggies and protein choice according to your preference.
I used kidney beans and navy beans for the protein and also included some cucumber, corn, red bell pepper along with avocado. I went with deseeded jalapeno for the spice, but you can add other chili peppers also.
Now without any further ado, here is my third recipe – Vegetarian Ceviche Salad with beans that I am posting under the theme – Explore Southern Hemisphere.
Vegetarian Ceviche Salad
Ingredients:
- Cooked Navy Beans – ½ cup
- Cooked Kidney Beans – ⅓ cup
- Onion chopped length-wise – ½ cup
- Frozen Corn – ⅓ cup
- Avocado – 1
- Chopped Cilantro – 3 tbsps
- Chopped Red Bell Pepper – ¼ cup
- Salt – 1 tsp
- Black Pepper – ½ tsp
- Deseeded and chopped jalapeno – 1 tsp
- Lemon juice – ⅓ cup
Steps:
- Chop the onion and add it to the lime juice and allow it to marinate for 20 to 30 minutes.
- After 30 minutes drain the onion and do not discard the lemon juice.
- Meanwhile, chop the red bell pepper, jalapeno, and cilantro.
- Thaw the corn and microwave for two minutes and drain the water.
- Mix the beans, corn, red bell pepper, salt, pepper, jalapeno, cilantro, and the marinated onion.
- Drizzle some lemon juice and serve with avocado wedges.
Recipe Notes:
- I cooked the beans well-ahead and used only ⅓ cup of navy beans and kidney beans for this. You can use canned beans too. Rinse it thoroughly before using.
- Instead of beans, you add cheese, paneer, tofu, tempeh for the protein choice or any other bean variety.
- Adjust the salt and spices according to your preference.
