Instant Pot Dalma is a simple dal prepared with mixed veggies and of course with split pigeon peas / toor dal. Check out the Instant Pot and pressure cooker version of this Dalma.
The next recipe that I am going to share in this Protein rich series is the Dalma, an Orissa special recipe. The interesting fact is, this dal pairs nicely with dosa and idli, too. :-)
Like sobji dal, Instant Pot Dalma forms a complete meal with rice as the dal is loaded with different veggies.
I learned this dal from one of our friends, and it has been on my todo list for quite a long time. Glad I didn’t post it earlier, if not I would have to look out for other dals from Orissa. So all is well. :-) I felt this dal more like our sambar sans sambar powder and the tempering. :-) We add cumin powder and red chili powder to spice this dal, and of course, the tempering is with panch phoron.
The panch phoron and the coconut take this dal to the whole new level. Panch Phoron is the combination of Nigella seeds (Kalonji), Yellow mustard seeds (Rai, some mix have black too. The one that I used had yellow mustard seeds), Fennel seeds (Saunf), Cumin seeds (Jeera) and Fenugreek seeds (Methi). The subtle flavor of the panch phoron adds that unique taste to this dal.
I did include onion but skipped garlic for this Dalma, and also instead of plantain, I went with yam. You can add any veggies of your choice but what I learned was that the traditional recipe calls for both plantain and pumpkin. You can add any other veggies as per your preference. I used some brinjals, potato, yam, butternut squash, and tomatoes.
When I prepared this, I served this along with the rice. But the next day, we tried the left over Dalma with dosa, and oh boy it was awesome. This dalma is sure a keeper recipe. :-)

Instant Pot Dalma | Oriya Special Dalma Recipe
Dalma – An Oriya special dal prepared with mixed veggies and toor dal/split pigeon peas.
Ingredients:
- Toor Dal / Split pigeon peas – ½ cup
- Chopped Onion – ¼ cup
- Turmeric powder – ½ tsp
- Water – 2 cups
- Cherry tomatoes – 5 or one big tomato – 1
- Medium potato – 1
- Brinjal – 1
- Chopped Yam(suran), squash and carrot – few pieces, approximately ½ cup
- Cumin Powder – ½ tsp
- Red chili powder – ¼ tsp
- Grated Coconut – 3 tbsps
- Salt – 1.5 tsp
- Chopped Cilantro – 2 tbsps
For Tempering:
- Oil – 2 tsps
- Panch Phoron – 1 tsp
- Red Chili – 2
- Hing – ½ tsp
Prep – Work:
- Rinse the toor dal and let it soak till you chop the veggies.
- Chop all the required vegetables and set aside.
Steps:
Instant Pot Method:
- Add the toor dal, water, turmeric powder and ¼ cup of chopped onion to the instant pot.
- Set it up in manual mode for 7 minutes and let the pressure release naturally.
- After the pressure is all released, carefully open the Instant Pot lid and then mash the dal nicely.
- Then add all the chopped vegetables, cumin powder, red chili powder, and salt.
- Close the IP lid and set it steam mode for 5 minutes.
- After 5 minutes, turn the IP off and open the IP lid.
- Mix the dal nicely and then set the IP back to saute mode.
- Add the grated coconut and chopped cilantro. Let it simmer for 2 minutes and turn off the IP.
- In a separate tadka pan, heat the oil. Once the oil is hot, add the hing, panch phoron, and red chili. As they start to splutter, add it to the dal mix and mix it well.
- That’s it. Dalma is ready. Serve hot with rice.
Pressure Cooker Method:
- In a pressure pan/cooker, add the toor dal, water, turmeric powder and ¼ cup of chopped onion and pressure cook for three whistles.
- After the pressure is all released, carefully open the pressure cooker lid and then mash the dal nicely and set aside.
- Heat a kadai or pan and add oil.
- Once the oil is hot, add hing, panch phoron, and red chilies.
- As the panch phoron starts to splutter, add the chopped veggies and saute for two minutes. Sprinkle some water and cover and cook until the vegetables are tender.
- Then add the mashed dal mix, salt, coconut, and cilantro.
- Mix them all and bring it to a boil.
Notes:
- Adjust the salt and spice as per your preference.
- And also the vegetables. As I mentioned above, plantain and pumpkin are used traditionally. But you can mix and match with whatever vegetables available.
- You can use ghee for tempering, but to keep it vegan, I went with oil.
- You can use mustard oil or your preferred oil for tempering.
