    Instant Pot Amti Dal | Maharashtrian Style Dal

    Instant Pot Amti Dal or Maharashtrian Style Dal is a simple and comforting Maharashtrian style amti dal prepared with toor dal and goda masala.

    Dal and rasam are my favorite and ultimate comfort food. Each and every region/cuisine has its own dal recipe. And all these dal recipes are unique with their own flavor. The cholar dal that I posted yesterday is a very mild dal with coconut and this amti dal is a tangy and mild dal prepared with toor dal.

    During weekdays, these dals are super easy to prepare either in a slow cooker or in instant pot. This dal is also a no onion no garlic recipe. So be it on any auspicious day or during any vrath days, you can prepare this dal. This amti dal uses the Maharashtrian special Goda masala.

    I would recommend preparing this dal with the goda masala as it is the key ingredient here, but if you cannot find it, you can replace it with garam masala, but the taste differs completely. Traditionally black kokum is used for tanginess in this dal but as I couldn’t source it, I was looking for alternatives. That’s when I stumbled upon this recipe, which uses tamarind. So went with that recipe with slight modifications.

    Before getting into today’s recipes, let me share some of my other dal recipes,

    Without any further ado, here comes the amti dal recipe. But before that here is the IP formula.

    Instant Pot Amti Dal | Maharashtrian Style Dal Recipe

    Saute mode + manual for 12 minutes (normal pressure release).

    Ingredients:

    • Toor dal – ½ cup
    • Oil – 2 tsp
    • Mustard seeds – 1 tsp
    • Hing – ¼ tsp
    • Curry leaves – few
    • Green Chillies – 2
    • Tamarind paste – 1 tsp
    • Water – 2 cups + ¼ cup
    • Goda masala – 1 tsp
    • Jaggery – 1 tsp
    • Salt – ¾ tsp
    • Turmeric Powder – ¼ tsp
    • Cilantro for garnish

    Prep – Work:

    • Wash toor dal and soak it in water till we do the tempering.
    • Dilute 1 tsp of tamarind paste in ¼ of water. If using tamarind, soak a small betel nut size tamarind in ½ cup of water and extract the juice.
    • To this extracted juice, mix the goda masala, salt, jaggery and mix well. Set aside this tamarind mix.

    • Chop the green chilies into small pieces.

    Steps:

    Adding the mustard seeds, hing and chopped green chilies

    • Set your Instant pot in saute mode and add 2 tsp of oil.
    • Once the oil is hot, add the mustard seeds, hing, chopped green chilies, curry leaves and saute for a couple of minutes.
    • Now add the wash dal, turmeric powder, water, tamarind mix ( tamarind extract + goda masala + salt + jaggery).
    • Mix well and set the IP in manual mode for 12 minutes.
    • Once done, let the pressure release normally.
    • After opening the IP, mash the dal nicely.
    • Garnish with cilantro and serve hot with rice or roti.

    Notes:

    • Tamarind can be replaced with kokum and vice versa.
    • Goda masala is preferred, but it can be replaced with garam masala.
    • Adjust the salt, sugar, and spices as per your preference.

      when do you add the curry leaves? do you need to add any additional water other that the 1/4 cup for the tamarind?

        Sorry about that. We add curry leaves while initial tempering and also we need to add 2 more cups of water. I have it on ingredients list but missed it on the instruction. My bad. Updated it now. Thanks
