Pita Pocket Salad Wrap is a candid and a crunchy protein-packed salad with garbanzo beans filled inside the pita pockets and coated with hummus. It is a delicious and a balanced meal for your lunch box. Check out the salad dressing and how I pack this Pita pocket salad wrap for my lunch.
For this week’s Blogging Marathon, the theme is “Rolls and Wraps.” I got this recipe from my colleague. It’s a simple salad recipe, and you can prepare it under 30 minutes. It is very filling and at the same time delicious too. Yes, salads are delicious when we use the right ingredients and right dressings.
What’s in the Salad?
For this recipe, I used cooked garbanzo beans, some mixed salad greens, cucumber, olives, tomatoes, onions, hummus and some mozzarella cheese. I know feta cheese goes well with this, but as its hard to source the rennet-free one, I go with the cheddar or mozzarella.
I love the flavors of balsamic vinegar, and that’s what I am using for this salad too. Oil + balsamic vinegar + salt and pepper. Mix and drizzle. The dressing is as simple as that.

How do I pack this for work?
I take the greens, salad, pita pockets and hummus separately. I take the dressing with added salt and pepper separately. Before lunch, I just spread the hummus in the pita pocket and mix the required salad with dressing. You can add avocado to make it healthier. This salad measure serves four people. Now here is the pita pocket salad recipe,
Ingredients:
- For Filling:
- Mixed greens – a handful
- English Cucumber – 1 (chopped, approx 2 cups)
- Roma Tomato – 1 (approx, ¾ cup)
- Olives – 5 (cut)
- Cooked Garbanzo beans – 1.5 cups
- Onion – chopped, ¼ cup
- Dressing:
- Olive oil – 1 tbsp
- Balsamic Vinegar – 1.5 tbsp
- Salt – ¾ tsp
- Pepper – 1 tsp
- For Wrap:
- Pita Bread – 4
- Hummus – 4 tbsp (1 tbsp for each bread)
Steps:
- Chop the cucumber, tomatoes, and olives and mix it with the garbanzo beans.
- Add the greens, cheese, and the dressing
- Spread the hummus inside the pita pocket.
- Now fill in the pita pocket with the salad and enjoy.
Notes:
- Feta cheese goes well with this salad, but you can opt for your favorite one.
- You can include grilled veggies of your choice.
- Adjust the dressing proportions according to your preference.
